A traditional cookie made with extra virgin olive oil, fresh orange juice, wine and Greek brandy that is crunchy on the outside and soft on the inside.

Ingredients
greek extra virgin olive oil | 1 ½ cups |
sugar | 1 ½ cups |
orange juice,freshly squeezed | 1 cup |
baking soda | 1 tablespoon |
vanilla extract | 1 tablespoon |
cognac | 3 tablespoons |
powdered cinnamon | 2 tablespoons |
dry red wine | ¼ cup |
orange zest | 1 |
all-purpose flour | 4-5 cups (may need a little extra) |
How to cook
- In a bowl, beat the extra virgin olive oil and sugar.
- In a separate bowl, add the orange juice and baking soda and stir. Pour into the oil and sugar mixture and mix.
- Add the red wine, orange zest, cinnamon, vanilla and cognac. Mix well.
- Gradually add flour until the batter thickens and doesn’t stick to your fingers. If it is sticky, slowly add additional flour.
- Make small balls (ping ball size), roll out into the shape of a long rope, fold over in half and twist. Roll out into a long rope and make a circle. Or, roll out into a long rope and make the shape from the letter “S.” Place on a cookie sheet lined with non-stick baking paper and bake at 350 degrees 20 minutes or until golden brown both on the top and bottom.
