fresh sardines | 2 pounds (900 grams) |
greek extra virgin olive oil | ½ cup |

sea salt | to taste |
For Tomato Sauce
greek extra virgin olive oil | ⅓ cup |
onion,finely chopped | 1 |
garlic cloves | 4 |
ripened tomatoes,grated | 3 |
tomato, diced | 1 |
hot water | ½ cup |
salt and pepper | to taste |
How to cook
- Marinate the Sardines: in a greased baking dish, carefully arrange the fish slightly overlapping one another. Drizzle the extra virgin olive oil, garlic, oregano, lemon juice, pepper and sea salt. Cover.
- In a sauté pan, on a medium heat, add the 1/3 cup of extra virgin olive oil and 1 onion. Cook until their soft and glossy.
- Add the 4 garlic cloves and continue sautéing for another few minutes.
- Then add the 3 grated tomatoes,1 diced tomato, season with salt and pepper and turn up the heat so it comes to a boil.
- Add the hot water and again bring it to a boil.
- Once it boils, turn down the heat and let it simmer until the tomato sauce thickens.
- Then set the sauce to the side so it can completely cool.
- Pour the cooled tomato sauce all over the sardines, sprinkle with parsley and drizzle a little more extra virgin olive oil.
- In a preheated 400F degree (200C) oven bake for about 20-25 minutes.
- While it’s baking, check to see if the sauce needs a little help by adding some water.
