- Crispy Squid (Fried Calamari)

A simple and quick recipe for fried calamari with a Greek kick. Marinated in Ouzo, the results are tender on the inside and crispy on the outside.

fresh squid | 1 ¼ Lb (565 gr) |
ouzo | ½ cup |
all-purpose flour | ½ cup |
semolina | ½ cup |
bread crumbs | ¼ cup |
ground garlic | 1 tablespoon |
lemon rind, grated | 1 tablespoon |
salt | ½ teaspoon |
pepper | ½ teaspoon |
lemon | 6 wedges |
greek extra virgin olive oil | for frying |
With sharp knife, cut squid crosswise into 1 inch rings or thaw frozen squid the night before in your refrigerator. Rinse squid well and pat dry.
In a bowl, add the squid and ouzo. Mix well with your hands and cover with cellophane. Refrigerate for 30 minutes.
In a bowl, combine flour, semolina, bread crumbs, ground garlic, lemon rind, salt and pepper; add squid rings and tentacles, in batches, and toss to coat.
In skillet, heat oil over medium high heat; cook squid, turning once, in batches making sure to not crowd, for 2 to 3 minutes or until golden. Drain on paper towel-lined plate.
Serve with lemon wedges.
