Simple, fresh and absolutely delicious, is made with ripe tomatoes, cucumbers, onions, Feta cheese, Kalamata olives and topped off the right amount of extra virgin olive oil and oregano.

For the salad
ripe vine tomatoes | 1 (cut in ¼) |
cucumber,peeled,halved lengthwise,seeded and | 1 |
red onion,peeled and thinly sliced | 1 medium |
feta cheese cut in cubes | ½ Lb. (1 cup) |
greek oregano,dried | 1 tablespoon |
greek Kalamata olives,with pit | ¾ cup |
For the dressing
greek extra virgin olive oil | 5 tablespoons |
salt | to taste |
How to cook
- Cut the tomatoes in ¼'s. Put them into a bowl.
- Peel the cucumber, cut in half lengthwise, remove the seeds if they are bitter and cut into bit-size chunks. Add to the tomatoes.
- Peel and thinly slice the onion thinly and add in the bowl.
- Deseed your pepper and roughly chop. Add them to the salad along with the other ingredients.
- Add the extra virgin olive oil, oregano, Kalamata olives, Feta cheese and salt. Toss everything together with your hands.
- Have a taste and adjust the flavour if need be.
- Pour onto a serving dish.
