For the salad
romaine lettuce,chopped | ½ |
cabbage,sliced thinly | ½ |
carrot,shredded | 1 |
red roasted peppers (in a jar with its oil) | 2(cut in thick strips) |
greek capers | 1 handful |
cherry tomatoes,cut in half | 8 |
cucumber | 1 |
red onion,sliced thinly | ½ medium |
greek Kalamata olives | 1 handful |
greek bell pepper | 1 small |
For the dressing
greek extra virgin olive oil | ⅔ cup |
How to cook
- For the dressing: in a bowl whisk all the ingredients well.
- For the salad: in a bowl add the lettuce, cabbage and carrot. Add half of the dressing and toss well. Then, set in a salad bowl or platter.
- Top off with the cherry tomatoes, cucumber, onion, bell pepper, roasted red peppers, olives and capers. Drizzle the remaining dressing over these ingredients, sprinkle a little extra oregano(optional) and serve.
