Main ingredients

greek extra virgin olive oil, fine semolina, sugar

Cooking Method

12 Servings

greek extra virgin olive oil 1 cup
fine semolina 1 cup
coarse semolina 1 cup
sugar 2 ½ cups
water 4 cups
blanced almonds, chopped and toasted ¾ cup
powdered cinnamon 1 tablespoon
cinnamon stick 1
orange peel 1 large
lemon peel 1 small
cloves 2
greek honey ¼ cup or 4 tablespoons
How to cook

1. In a pot, add the 4 cups of water, 2 ½ cups sugar, cinnamon stick, cloves, orange and lemon peel and bring to boil for 5 minutes, turn off the heat and add the honey.

2. In a deep pot, on medium to high heat add the extra virgin olive oil and 2 cups of semolina.  Constantly stir with a wooden spatula until the color changes from a golden blonde to a golden brown.

3. Once the color changes add the 1 tablespoon ground cinnamon. Stir.

4. Very carefully, slowly add small amounts of the simple syrup to the semolina (the hot syrup will steam and splatter so be careful).

5. On a medium-low heat, continually stir until the mixture thickens.  Add the almonds and stir.

6. Transfer to a cake pan and let it cool.  Turn over onto  a cake platter and dust with cinnamon.
