- Halva with Semolina

A traditional pudding like cake made with semolina, almonds, extra virgin olive oil, orange, lemon and cinnamon drenched in a simply syrup sauce.

coarse semolina | 1 cup |
sugar | 2 ½ cups |
water | 4 cups |
blanced almonds,chopped and toasted | ¾ cup |
powdered cinnamon | 1 tablespoon |
cinnamon stick | 1 |
orange peel | 1 large |
lemon peel | 1 small |
cloves | 2 |
greek honey | ¼ cup or 4 tablespoons |
1. In a pot, add the 4 cups of water, 2 ½ cups sugar, cinnamon stick, cloves, orange and lemon peel and bring to boil for 5 minutes, turn off the heat and add the honey.
2. In a deep pot, on medium to high heat add the extra virgin olive oil and 2 cups of semolina. Constantly stir with a wooden spatula until the color changes from a golden blonde to a golden brown.
3. Once the color changes add the 1 tablespoon ground cinnamon. Stir.
4. Very carefully, slowly add small amounts of the simple syrup to the semolina (the hot syrup will steam and splatter so be careful).
5. On a medium-low heat, continually stir until the mixture thickens. Add the almonds and stir.
6. Transfer to a cake pan and let it cool. Turn over onto a cake platter and dust with cinnamon.
