Ingredients
unsalted butter 2 cups
feta cheese 2 cups
kasseri cheese,grated 1 cup
kefalotyri cheese,grated 1 cup
green onions/chives ½ cup
black pepper ½ tablespoon
garlic powder 1 tablespoon
eggs 3-4
phyllo pastry sheets 1 package
tabasco hot sauce optional
How to cook


  1. Clarify 2 cups of good quality unsalted butter melting it slower over a low heat. Leave on the side to cool.
  2. Grab a mixing bowl and crumble the Feta cheese.  Add the remaining ingredients and mix well.
  3. Remove the plastic from the phyllo leaving it rolled up.  With a sharp knife cut the phyllo in three equal portions.  Cover the two portions in a cold damp cloth to avoid drying out of the phyllo. 
  4. Open the first portion of the phyllo long ways.  With a pastry brush, brush on the entire phyllo sheet clarified butter.  Fold over, the end towards you, approximately two inches.  Add one teaspoon of the mixture. 
  5. Fold over the two inch part again making sure the mixture in covered and then fold over both sides to seal in tight the mixture.  Begin folding the phyllo with the mixture inside in a triangle shape from side to side.  The same method like making a paper football.  Dab butter at the end to seal and place on a baking sheet.  Repeat.
  6. Place in a 350 degree Fahrenheit (175 Celsius) oven for approximately 30 minutes or until golden brown.
